I\u2019ve cooked in professional kitchens, made sauces from scratch, worried about whether somebody was going to fuck up the hollandaise, and spent more years than I care to count figuring out why one dish works and another one just sits there on the plate looking sad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And somehow, nobody thought to tell me that <strong>dark chocolate and whiskey together are fucking fantastic.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Apparently I had to figure this shit out myself.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Why Does It Work?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s not just because chocolate is delicious and whiskey is delicious.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There\u2019s actually some culinary logic going on here.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Good dark chocolate has bitterness, roasted cocoa, caramel, fruit, nuts, vanilla, and sometimes even earthy or smoky notes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Whiskey can bring vanilla, oak, caramel, spice, dried fruit, smoke, toasted grain, and all sorts of other flavors depending on what you&#8217;re drinking.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put the right two together and they start talking to each other.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The chocolate softens the sharp edges of the whiskey.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The whiskey brings out the deeper flavors in the chocolate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And suddenly you&#8217;re sitting there thinking:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oh. Oh, shit.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Start With Dark Chocolate<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Don&#8217;t grab a random Hershey bar and expect a religious experience.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You want <strong>dark chocolate with enough cocoa character to stand up to the whiskey.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Something around 70\u201375% cocoa is a great place to start.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you love really dark chocolate, go higher.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But don&#8217;t assume that more cocoa automatically means better. Some 85% chocolate is beautifully complex. Some tastes like somebody wrapped a tree branch in bitterness and called it dessert.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We&#8217;re looking for <strong>flavor<\/strong>, not punishment.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Look for chocolate with notes like:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>roasted cocoa<\/li>\n\n\n\n<li>caramel<\/li>\n\n\n\n<li>vanilla<\/li>\n\n\n\n<li>coffee<\/li>\n\n\n\n<li>dried fruit<\/li>\n\n\n\n<li>nuts<\/li>\n\n\n\n<li>orange<\/li>\n\n\n\n<li>spice<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Those flavors give you somewhere to go when you start matching it with whiskey.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Then Pick Your Whiskey<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Here&#8217;s where it gets fun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A <strong>bourbon<\/strong> is a gorgeous partner for chocolate because bourbon commonly brings vanilla, caramel, oak and baking-spice notes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dark chocolate + bourbon?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Yeah.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s trouble.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A <strong>rye whiskey<\/strong> can be spicier and more assertive. If you like chocolate with cinnamon, chili, pepper, or other warm spices, rye can be fantastic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">An <strong>Irish whiskey<\/strong> can be softer and smoother, making it a lovely match for chocolate with caramel, nuts, coffee, or orange.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And then there&#8217;s <strong>Scotch<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Especially smoky Scotch.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now we&#8217;re getting into grown-up territory.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A smoky Scotch with intensely dark chocolate can be absolutely fucking magnificent if you enjoy those flavors.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s earthy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Smoky.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bitter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sweet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A little dangerous.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Basically, a campfire and a chocolate shop had a baby.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Don&#8217;t Just Drink It. Taste It.<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">This is the part I think people miss.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Don&#8217;t throw a piece of chocolate into your mouth and immediately knock back half a glass of whiskey.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Slow down.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You&#8217;re not at a frat party.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Take a small piece of chocolate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let it sit on your tongue for a few seconds.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Notice what you taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Is it bitter?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fruity?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nutty?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Creamy?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Roasty?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then take a small sip of whiskey.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let the whiskey move around your mouth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Notice what happens to the chocolate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Maybe the caramel comes forward.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Maybe the vanilla suddenly becomes obvious.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Maybe the smoky notes get stronger.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Maybe something completely unexpected happens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s the fun part.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A Few Pairings I&#8217;d Try<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>70% dark chocolate + bourbon<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Classic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The caramel and vanilla in bourbon play beautifully with dark chocolate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dark chocolate + orange + Irish whiskey<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This one is almost unfair.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chocolate and orange already belong together. Add whiskey and suddenly you&#8217;ve got a dessert that doesn&#8217;t need to apologize for itself.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>85% dark chocolate + smoky Scotch<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For people who like their dessert with a little attitude.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The bitterness of the chocolate can actually make the smoky whisky feel sweeter and more complex.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dark chocolate with sea salt + rye<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sweet, salty, bitter and spicy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s the good shit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dark chocolate with coffee notes + bourbon<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you like coffee and chocolate, this one is practically cheating.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">And Here&#8217;s the Thing&#8230;<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">You don&#8217;t need some elaborate dessert.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You don&#8217;t need a pastry chef.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You don&#8217;t need fourteen ingredients, three mixing bowls and an afternoon you&#8217;re never getting back.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put a few really good pieces of dark chocolate on a plate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour yourself a small glass of whiskey.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sit down.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Taste them together.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s dessert.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And honestly, I think this is one of the things I love most about food.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After all these years, I can still stumble across a combination that makes me stop and say:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>&#8220;Wait a fucking minute. Why did nobody tell me this?&#8221;<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Maybe that&#8217;s the best part.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There are still things to discover.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Still flavors that can surprise you.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Still combinations you haven&#8217;t tried.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And apparently, after decades in kitchens, I still had to discover that <strong>chocolate and whiskey are basically best friends.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You&#8217;re welcome.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now somebody pass me the dark chocolate.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>There are certain things you discover in life and immediately wonder: Where the hell has this been all my life?
