I have a confession.<\/p>\n\n\n\n
I cannot follow package directions.<\/p>\n\n\n\n
I don’t mean I won’t<\/em> follow them.<\/p>\n\n\n\n I mean I genuinely cannot.<\/p>\n\n\n\n Give me a box of pasta, a packet of rice, a frozen lasagna, a jar of sauce, a package of gravy mix\u2014whatever\u2014and tell me exactly what to do.<\/p>\n\n\n\n I will do it.<\/p>\n\n\n\n And somehow, somewhere along the way, dinner will look at me and say:<\/p>\n\n\n\n \u201cNope.\u201d<\/strong><\/p>\n\n\n\n The pasta will be too soft.<\/p>\n\n\n\n The rice will be crunchy.<\/p>\n\n\n\n The sauce will taste like somebody described tomatoes to a computer.<\/p>\n\n\n\n The frozen thing will be simultaneously frozen in the middle and threatening to burn around the edges.<\/p>\n\n\n\n And I’ll stand there staring at it thinking:<\/p>\n\n\n\n But I followed the fucking directions.<\/em><\/p>\n\n\n\n Here’s what I’ve learned after a very long time in kitchens:<\/p>\n\n\n\n Food doesn’t know how to read.<\/strong><\/p>\n\n\n\n The instructions might say, \u201cBoil for 8\u201310 minutes.\u201d<\/p>\n\n\n\n But your pot isn’t my pot.<\/p>\n\n\n\n Your stove isn’t my stove.<\/p>\n\n\n\n Your water might have been boiling before mine.<\/p>\n\n\n\n Your pasta might have been sitting in the cupboard for two years.<\/p>\n\n\n\n Your pan might be heavier.<\/p>\n\n\n\n Your oven might run hot.<\/p>\n\n\n\n Your refrigerator might be colder.<\/p>\n\n\n\n And maybe\u2014just maybe\u2014the person who wrote \u201c8\u201310 minutes\u201d wasn’t standing beside your stove<\/em> watching your pasta<\/em> cook.<\/p>\n\n\n\n That’s the part that gets me.<\/p>\n\n\n\n Package directions are written as though cooking is a mathematical equation.<\/p>\n\n\n\n It’s not.<\/p>\n\n\n\n Cooking is observation.<\/p>\n\n\n\n This is one of the biggest things professional cooking teaches you.<\/p>\n\n\n\n The food gets the final say.<\/strong><\/p>\n\n\n\n If the package says the pasta needs 10 minutes, I don’t blindly worship the clock.<\/p>\n\n\n\n I start checking it early.<\/p>\n\n\n\n Taste it.<\/p>\n\n\n\n Look at it.<\/p>\n\n\n\n Feel it.<\/p>\n\n\n\n Does it have some bite?<\/p>\n\n\n\n Is it where I want it?<\/p>\n\n\n\n If not, give it another minute.<\/p>\n\n\n\n Same with rice.<\/p>\n\n\n\n Same with vegetables.<\/p>\n\n\n\n Same with sauces.<\/p>\n\n\n\n Same with pretty much everything.<\/p>\n\n\n\n The directions are a starting point.<\/p>\n\n\n\n They’re not a fucking court order.<\/p>\n\n\n\n Oh, lord.<\/p>\n\n\n\n This is where package directions really lose me.<\/p>\n\n\n\n \u201cAdd one packet of seasoning.\u201d<\/p>\n\n\n\n Okay.<\/p>\n\n\n\n But does it taste good?<\/p>\n\n\n\n Because if it doesn’t, I’m not eating it just because the packet told me to.<\/p>\n\n\n\n I’ll add salt.<\/p>\n\n\n\n Maybe pepper.<\/p>\n\n\n\n Maybe garlic.<\/p>\n\n\n\n Maybe butter.<\/p>\n\n\n\n Maybe a little acid.<\/p>\n\n\n\n Maybe something with some umami.<\/p>\n\n\n\n Maybe I’ll add cheese.<\/p>\n\n\n\n Maybe I’ll add a splash of cream.<\/p>\n\n\n\n Maybe I’ll look at what’s sitting in the fridge and think, Well, this could work.<\/em><\/p>\n\n\n\n That’s cooking.<\/p>\n\n\n\n You taste something and decide what it needs.<\/p>\n\n\n\n You’re allowed to improve dinner.<\/strong><\/p>\n\n\n\n It’s knowing when the food needs help.<\/p>\n\n\n\n That’s a skill.<\/p>\n\n\n\n And you don’t need to be a chef to learn it.<\/p>\n\n\n\n Start with three questions:<\/p>\n\n\n\n Does it need salt?<\/strong><\/p>\n\n\n\n If it tastes flat or dull, it might.<\/p>\n\n\n\n Does it need fat?<\/strong><\/p>\n\n\n\n Butter, olive oil, cream, cheese\u2014sometimes a little richness is exactly what makes something taste finished.<\/p>\n\n\n\n Does it need acid?<\/strong><\/p>\n\n\n\n Lemon juice, vinegar, wine, tomatoes\u2014sometimes a tiny bit of acidity wakes everything the hell up.<\/p>\n\n\n\n And then there’s my favorite question:<\/p>\n\n\n\n What does this taste like it’s missing?<\/strong><\/p>\n\n\n\n You’d be amazed how often the answer appears once you actually stop and taste.<\/p>\n\n\n\n This is important.<\/p>\n\n\n\n I’m not going to stand here and tell you that everything needs to be homemade.<\/p>\n\n\n\n Sometimes you bought the damn package because you were tired.<\/p>\n\n\n\n I get it.<\/p>\n\n\n\n Sometimes dinner needs to happen with the least possible amount of bullshit.<\/p>\n\n\n\n That’s fine.<\/p>\n\n\n\n Buy the boxed mac and cheese.<\/p>\n\n\n\n Buy the jarred sauce.<\/p>\n\n\n\n Buy the frozen whatever.<\/p>\n\n\n\n Use the packet.<\/p>\n\n\n\n Just don’t be afraid to fuck with it.<\/strong><\/p>\n\n\n\n Add something.<\/p>\n\n\n\n Change something.<\/p>\n\n\n\n Taste it.<\/p>\n\n\n\n Make it yours.<\/p>\n\n\n\n Because there’s a huge difference between following directions<\/em> and making dinner.<\/em><\/p>\n\n\n\n And I know which one I’d rather do.<\/p>\n\n\n\n You’re still the cook.<\/p>\n\n\n\n That’s the part I wish more people knew.<\/p>\n\n\n\n You don’t need culinary school.<\/p>\n\n\n\n You don’t need seventeen kinds of salt.<\/p>\n\n\n\n You don’t need a kitchen full of expensive equipment.<\/p>\n\n\n\n And you definitely don’t need to feel like you’ve failed because your dinner doesn’t look exactly like the picture on the package.<\/p>\n\n\n\n Taste it.<\/p>\n\n\n\n Pay attention.<\/p>\n\n\n\n Adjust.<\/p>\n\n\n\n Try again.<\/p>\n\n\n\n That’s cooking.<\/p>\n\n\n\n And if the package directions let you down?<\/p>\n\n\n\n Well.<\/p>\n\n\n\n Fix the damn thing.<\/strong><\/p>\n\n\n\n You can make it better.<\/p>\n","protected":false},"excerpt":{"rendered":" I have a confession.
