Because a benny is really about four things: a sturdy base, something savoury, a runny egg and a rich sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After that, the rules get pretty loose.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And thank God for that.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Because if the only acceptable Benedict involved Canadian bacon and an English muffin, we&#8217;d be missing out on a ridiculous amount of good food.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So let&#8217;s talk bennies.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What Makes a Benny a Benny?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Traditionally, you&#8217;re looking at an English muffin, Canadian bacon, a poached egg and hollandaise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s a classic for a reason. The muffin gives you crunch and structure, the ham brings salt, the egg adds richness and the hollandaise ties the whole thing together with butter and acid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But that basic architecture is incredibly flexible.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Start with the base<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">An English muffin is excellent, but it&#8217;s hardly mandatory.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Try:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>sourdough<\/li>\n\n\n\n<li>brioche<\/li>\n\n\n\n<li>a biscuit<\/li>\n\n\n\n<li>a toasted baguette<\/li>\n\n\n\n<li>a potato cake<\/li>\n\n\n\n<li>a hash brown<\/li>\n\n\n\n<li>a latke<\/li>\n\n\n\n<li>crispy polenta<\/li>\n\n\n\n<li>a savoury waffle<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">The only real requirement is that it can support the rest of the pile without collapsing into a breakfast landslide.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Then choose your savoury bit<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">This is where the personality comes in.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Canadian bacon is just one possibility. Bacon, ham, smoked salmon, crab, shrimp, sausage, chorizo, leftover steak, pulled pork, mushrooms, spinach, asparagus, avocado or fried chicken can all work.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you&#8217;ve got leftovers in the fridge, even better.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A benny is basically an extremely delicious excuse to give yesterday&#8217;s dinner a new job.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Then comes the egg<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Poached is traditional, and there&#8217;s something particularly satisfying about cutting through that soft yolk and letting it become part of the sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But I&#8217;m not going to send the brunch police after you if you prefer a fried egg.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The yolk is the important bit.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Finally: sauce<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Hollandaise is the obvious choice, and for good reason.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Egg yolks, butter and acid are a pretty spectacular combination.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But don&#8217;t be afraid to change it up. Dijon, chives, hot sauce, herbs, smoked paprika or tarragon can completely change the character of the dish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s the fun.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">The Classic<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Let&#8217;s start with the original.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">An English muffin gets toasted until the edges are crisp. Canadian bacon gets warmed in a pan. A poached egg goes on top, followed by a generous spoonful of hollandaise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finish with black pepper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Simple.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Perfect.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There is absolutely nothing wrong with leaving it alone.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But we&#8217;re here to have some fun.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">The Bacon Benny<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Swap the Canadian bacon for properly crisp bacon and you&#8217;ve got a completely different animal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The extra smoke and crunch work beautifully against the soft egg and buttery sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is one of those breakfasts where you don&#8217;t need to get clever. Toast the muffin well. Cook the bacon properly. Make the hollandaise bright enough that the whole thing doesn&#8217;t become a giant pile of fat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A little black pepper finishes it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s breakfast sorted.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Florentine<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Eggs Florentine brings spinach into the picture, and it&#8217;s a very good decision.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saut\u00e9 the spinach until it&#8217;s just wilted. Garlic and butter are welcome additions. Pile it onto your toast, add the egg and spoon over the hollandaise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The spinach brings a slightly bitter, vegetal note that cuts through all that richness.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And suddenly we&#8217;re pretending breakfast is healthy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I support this lie.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Royale<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Smoked salmon is where a Benedict starts feeling fancy without actually requiring much extra work.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Warm, toasted bread. A few folds of smoked salmon. The poached egg. Hollandaise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now add capers, dill or a squeeze of lemon if you want to push it toward classic smoked-salmon territory.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is the benny for when you want brunch to feel expensive.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You don&#8217;t actually have to spend that much.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Crab<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">If you&#8217;ve got good crab, don&#8217;t fuck around with it too much.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dungeness crab is particularly good here. Warm it gently and season it simply. Lemon is plenty.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then let the egg and hollandaise do the rest.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sourdough is a great base because it has enough flavour and structure to stand up to the crab.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you&#8217;re lucky enough to have leftover crab from dinner?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Even better.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Breakfast just got promoted.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Shrimp<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Shrimp takes the same general idea in a slightly different direction.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Give them a little seasoning and a quick saut\u00e9 until they&#8217;re just cooked. You don&#8217;t want rubbery shrimp sitting underneath an egg you&#8217;ve spent all morning perfecting.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A bit of green onion or chive works beautifully.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you want some heat, put it in the hollandaise rather than blasting the whole dish with hot sauce.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Steak<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Now we&#8217;re wandering into dangerous territory.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Thinly sliced leftover steak is fantastic under a poached egg.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use sourdough or a good piece of toasted bread, then add some caramelized onions if you&#8217;ve got them. Hollandaise works, although b\u00e9arnaise is arguably even more at home here.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And yes, leftover steak from dinner absolutely counts.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In fact, I think this is one of the best reasons to make extra steak in the first place.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dinner tonight.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Benny tomorrow.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s planning.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Pulled Pork<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">This is where brunch starts getting a little ridiculous.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Take some leftover pulled pork and crisp the edges in a skillet. Put it on a warm biscuit or sturdy toast.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now you&#8217;ve got sweet, smoky, salty pork underneath a soft egg and rich sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pickled onions would be excellent here. A little barbecue sauce wouldn&#8217;t hurt either.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Just don&#8217;t drown the thing.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You&#8217;ve already got enough going on.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Fried Chicken<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Obviously.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Crispy fried chicken and a poached egg are already a pretty convincing argument.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put them on a biscuit and add hollandaise with a little hot sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s all the explanation this one needs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eat it slowly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then take a nap.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">The Potato Benny<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">This is where leftovers really start earning their keep.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Yesterday&#8217;s roasted potatoes can be chopped and crisped in a skillet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mashed potatoes can become potato cakes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Hash browns are already halfway there.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Any of them can become the foundation for a benny.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add whatever makes sense from there: bacon, smoked salmon, mushrooms, leftover steak, saut\u00e9ed greens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then the egg.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then the sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You&#8217;ve just turned a container of potatoes into something you might happily pay $19 for at brunch.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">The Waffle Benny<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">I&#8217;m not talking about pouring hollandaise over a stack of maple waffles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We&#8217;re making a <strong>savoury waffle<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cornmeal, cheddar, herbs or potatoes all make excellent candidates.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once you&#8217;ve got a crisp waffle, treat it like your English muffin. Add bacon, ham, mushrooms or smoked salmon, then finish with the egg and sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The waffle gives you crisp edges and a little more personality than plain toast.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And yes, you can put hot sauce on it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You are among friends.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">The Latke Benny<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">This one makes an absurd amount of sense.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A crispy potato latke gives you the perfect base: crunchy outside, soft inside and salty enough to make you want another one before you&#8217;ve finished the first.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add smoked salmon, pastrami or saut\u00e9ed mushrooms.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Top with your egg and hollandaise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chives are excellent here.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So are pickled onions.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you&#8217;re wondering whether sour cream belongs somewhere in this situation, I&#8217;m not going to stop you.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">The Mushroom Benny<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">This is where vegetarians get to have some fun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The trick is <strong>actually browning the mushrooms<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Don&#8217;t crowd the pan and gently cook them until they become grey little kitchen sponges.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Give them room.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Get the pan hot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let them brown.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Butter, garlic and thyme are welcome.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once they&#8217;re deeply savoury and golden, they need very little else.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put them on toast, add your egg and finish with hollandaise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Simple food, properly cooked.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s usually the answer.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Asparagus<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">This one is particularly good when asparagus is in season.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Roast or grill it until you get some colour. Lay it across toasted sourdough and let the egg and hollandaise do their thing.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A little Parmesan doesn&#8217;t hurt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Neither does lemon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The slight bitterness of asparagus is exactly what a rich sauce needs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s the thing I want you to start noticing when you build these.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Balance matters more than tradition.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Rich needs acid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Soft needs crunch.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Salty needs something fresh.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s how you make a dish work.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Avocado<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Yes, we&#8217;re doing avocado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But let&#8217;s not pretend avocado automatically makes something good.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use good toast. Season the avocado properly. Add some chili flakes or fresh herbs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then let the egg provide the richness and the hollandaise bring the acidity.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bacon works.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Smoked salmon works.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tomatoes work.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you want to make the whole thing a little more interesting, throw some pickled onions on top.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now you&#8217;ve got texture, heat, acid and richness all happening at once.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">Chorizo<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">Crisp some chorizo in a pan and you&#8217;ve already got most of the flavour you need.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use a corn-based cake, toasted sourdough or even a crispy potato as the base.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the sauce, give the hollandaise some lime and heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Finish with cilantro and pickled onions.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The important thing here is not to make every component spicy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You want <strong>heat, richness and acid<\/strong> working together.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There&#8217;s a difference between flavourful and simply setting your mouth on fire.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h1 class=\"wp-block-heading\">The Leftover Benny<\/h1>\n\n\n\n<p class=\"wp-block-paragraph\">This might actually be my favourite category.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Because once you understand the basic structure, the fridge becomes your menu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leftover roast beef?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Benny.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chicken from last night&#8217;s dinner?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Benny.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Those mushrooms you cooked and didn&#8217;t finish?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Absolutely.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Roasted asparagus?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Yep.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pulled pork?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You know it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The question isn&#8217;t:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>&#8220;Do I have the ingredients for Eggs Benedict?&#8221;<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>&#8220;What do I have that would taste bloody fantastic with a runny egg and a good sauce?&#8221;<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That is a
