Chocolate & Whiskey: Apparently Nobody Told Me

There are certain things you discover in life and immediately wonder:

Where the hell has this been all my life?

Chocolate and whiskey is one of those things.

I have spent most of my life around food. I’ve cooked in professional kitchens, made sauces from scratch, worried about whether somebody was going to fuck up the hollandaise, and spent more years than I care to count figuring out why one dish works and another one just sits there on the plate looking sad.

And somehow, nobody thought to tell me that dark chocolate and whiskey together are fucking fantastic.

Apparently I had to figure this shit out myself.

Why Does It Work?

It’s not just because chocolate is delicious and whiskey is delicious.

There’s actually some culinary logic going on here.

Good dark chocolate has bitterness, roasted cocoa, caramel, fruit, nuts, vanilla, and sometimes even earthy or smoky notes.

Whiskey can bring vanilla, oak, caramel, spice, dried fruit, smoke, toasted grain, and all sorts of other flavors depending on what you’re drinking.

Put the right two together and they start talking to each other.

The chocolate softens the sharp edges of the whiskey.

The whiskey brings out the deeper flavors in the chocolate.

And suddenly you’re sitting there thinking:

Oh. Oh, shit.

Start With Dark Chocolate

Don’t grab a random Hershey bar and expect a religious experience.

You want dark chocolate with enough cocoa character to stand up to the whiskey.

Something around 70–75% cocoa is a great place to start.

If you love really dark chocolate, go higher.

But don’t assume that more cocoa automatically means better. Some 85% chocolate is beautifully complex. Some tastes like somebody wrapped a tree branch in bitterness and called it dessert.

We’re looking for flavor, not punishment.

Look for chocolate with notes like:

  • roasted cocoa
  • caramel
  • vanilla
  • coffee
  • dried fruit
  • nuts
  • orange
  • spice

Those flavors give you somewhere to go when you start matching it with whiskey.

Then Pick Your Whiskey

Here’s where it gets fun.

A bourbon is a gorgeous partner for chocolate because bourbon commonly brings vanilla, caramel, oak and baking-spice notes.

Dark chocolate + bourbon?

Yeah.

That’s trouble.

A rye whiskey can be spicier and more assertive. If you like chocolate with cinnamon, chili, pepper, or other warm spices, rye can be fantastic.

An Irish whiskey can be softer and smoother, making it a lovely match for chocolate with caramel, nuts, coffee, or orange.

And then there’s Scotch.

Especially smoky Scotch.

Now we’re getting into grown-up territory.

A smoky Scotch with intensely dark chocolate can be absolutely fucking magnificent if you enjoy those flavors.

It’s earthy.

Smoky.

Bitter.

Sweet.

A little dangerous.

Basically, a campfire and a chocolate shop had a baby.

Don’t Just Drink It. Taste It.

This is the part I think people miss.

Don’t throw a piece of chocolate into your mouth and immediately knock back half a glass of whiskey.

Slow down.

You’re not at a frat party.

Take a small piece of chocolate.

Let it sit on your tongue for a few seconds.

Notice what you taste.

Is it bitter?

Fruity?

Nutty?

Creamy?

Roasty?

Then take a small sip of whiskey.

Let the whiskey move around your mouth.

Notice what happens to the chocolate.

Maybe the caramel comes forward.

Maybe the vanilla suddenly becomes obvious.

Maybe the smoky notes get stronger.

Maybe something completely unexpected happens.

That’s the fun part.

A Few Pairings I’d Try

70% dark chocolate + bourbon

Classic.

The caramel and vanilla in bourbon play beautifully with dark chocolate.

Dark chocolate + orange + Irish whiskey

This one is almost unfair.

Chocolate and orange already belong together. Add whiskey and suddenly you’ve got a dessert that doesn’t need to apologize for itself.

85% dark chocolate + smoky Scotch

For people who like their dessert with a little attitude.

The bitterness of the chocolate can actually make the smoky whisky feel sweeter and more complex.

Dark chocolate with sea salt + rye

Sweet, salty, bitter and spicy.

That’s the good shit.

Dark chocolate with coffee notes + bourbon

If you like coffee and chocolate, this one is practically cheating.

And Here’s the Thing…

You don’t need some elaborate dessert.

You don’t need a pastry chef.

You don’t need fourteen ingredients, three mixing bowls and an afternoon you’re never getting back.

Put a few really good pieces of dark chocolate on a plate.

Pour yourself a small glass of whiskey.

Sit down.

Taste them together.

That’s dessert.

And honestly, I think this is one of the things I love most about food.

After all these years, I can still stumble across a combination that makes me stop and say:

“Wait a fucking minute. Why did nobody tell me this?”

Maybe that’s the best part.

There are still things to discover.

Still flavors that can surprise you.

Still combinations you haven’t tried.

And apparently, after decades in kitchens, I still had to discover that chocolate and whiskey are basically best friends.
